Preparation Instructions

Step 1:  Selecting and Preparing the Yam

  • Choose a firm, unblemished tuber of yam.

  • Rinse the peeled yam thoroughly under running water.
  • Cut the yam into discs about ½ inch thick, then slice each disc into chips, wedges, or sticks, depending on your preference.

Step 2: Soaking the Yam

  • Place the sliced yam in a large bowl of water.
  • Add a pinch of salt and let them soak for about 10-15 minutes. This step helps remove excess starch and prevents browning.

Step 3: Prepping for Frying

  • Drain the yam slices and pat them dry with a clean towel or paper towels. Removing excess moisture is vital for crispy results.
  • Sprinkle a little salt over the yam slices and toss to coat evenly. If you like, you can also add a pinch of your favourite spices at this stage.

Step  4: Heating the Oil

  • Pour enough vegetable oil into a deep frying pan or deep fryer to submerge the yam pieces.
  • Heat the oil to about 350°F (175°C). To test readiness, drop in a yam piece; it should sizzle immediately.

Step 5: Frying the Yam

  • Fry the yam in batches. Avoid overcrowding the pan, as this can lower the oil temperature and make the yam soggy.
  • Fry for 5-8 minutes, flipping occasionally, until all sides are golden brown and crispy.
  • Use a slotted spoon or tongs to transfer fried yam onto a plate lined with paper towels to drain excess oil.

Step  6: Serving

  • Serve hot, sprinkled with a little more salt if desired.
