  10. 1 tablespoon locust bean (iru), optional

  • If using dried fish, soak it in water for about 30 minutes to soften it. Clean and remove any bones, if necessary.
  • For smoked fish, gently shred or flake it into smaller pieces, discarding any large bones.

  • In a blender or mortar and pestle, combine onions, garlic, ginger, and Scotch bonnet peppers.
  • Adjust the pepper level based on your spice tolerance.
  • Blend the mixture to form a smooth paste.
